Slow Cooking Your Way Through the Holidays

Rachor’s new book, Fast Cooking in a Slow Cooker Every Day of the Year: A Slow Cooker Vegetarian Cookbook, includes recipes for 300 low-fat, cholesterol-free dishes including new healthy favorites such as “Maple-Almond Sweet Potatoes,” “Barbecued Meatballs,” and “Apple Crumble Crisp.” It takes the guesswork out of preparing a wide variety of recipes in a slow cooker. “You would be absolutely amazed at some of the things you can do with a slow cooker,” says Rachor.

A recent study has proven that a diet rich in beans may mean more protection against cancer. A whole section, “Incredibly Delicious Bean Cuisine,” is devoted to a variety of recipes using beans. “Beans are a valuable addition to our diet,” she says. “They are a good source of protein, B vitamins, phytochemicals, fiber and more. They contain soluble fiber which helps to lower cholesterol.” Bean-themed recipes include: “Cuban Black Beans”, “Baked Beans,” “South of the Border Beans” and “Bean Without the Bacon Soup.”

The book also includes a wide range of vegetarian cuisine that can be made in slow cookers. Rachor presents simple and delicious recipes for baked potatoes, cooked cereals, chowders, soups, lasagna, non-dairy macaroni and cheese, scalloped potatoes, date bars, and brownies. All of the recipes are meat-free and dairy-free and are designed to be both delicious and nutritious.

“I have met many people who want to make improvements to their lifestyle,” says Rachor, “but this can sometimes seem daunting. I suggest making gradual changes. A good way to start is by drinking more water. Increase whole grains in the diet, such as popcorn without butter, oats, or whole-grain breads.
