Love Albacore Tuna Fish But Afraid Of Mercury?

Scottsdale, AZ (PRWEB) October 5, 2005 -- Jigsaw Health, the web's leading resource for chronic conditions, today announced that it is selling canned Carvalho minimal mercury Albacore Tuna, which is safe for children and pregnant women and is ideal for anyone wishing to eat tuna and greatly limit their consumption of mercury.

Jigsaw Health offers a variety of nutritious foods for sale at its website, jigsawhealth.com. All Jigsaw Health products are designed to help individuals find the pieces to their chronic health puzzle.

"Our goal is to help those suffering from chronic conditions find the pieces to their health puzzle, and nutrition is a key for almost all of them," says Patrick Sullivan Jr., co-founder and president of Jigsaw Health. "Mercury is a known neuron-toxin. By eliminating as much mercury as possible from the diet, individuals who are sensitive to this toxic substance will be able to improve their lives. Minimal-mercury tuna also provides a healthy canned-fish choice for women who are pregnant or nursing, for women who are considering becoming pregnant, and young children."

Jigsaw Health executives will also join hundreds of protesters in Philadelphia this week at the American Dental Association's annual conference. This week is National Amalgam Awareness Week . Research has shown that the mercury in dental amalgams — commonly referred to as "silver fillings" — can contribute to heavy metal toxicity in humans, potentially leading to a variety of chronic health conditions.

Zogby International surveyed Connecticut voters in August and found:
• 79% did not know mercury is a primary ingredient in "silver" dental fillings;
• More than 80% support a ban on continued use of mercury fillings;
• 87% support the law that prohibits the sale of mercury products in Connecticut.

"One of our goals is to help bring about the prohibition of mercury amalgams, and we are proud to take part in this awareness-raising event," said Sullivan.

Using Carvalho canned minimal mercury albacore tuna can help eliminate a common source of mercury.
Consider:
• A recent survey conducted with canned albacore tuna in U.S. grocery stores showed that one can in 20 exceeded the FDA "action" level of 1.0 part per million (ppm) of mercury.
• Test results show the amount of mercury in Carvalho Minimal-Mercury albacore tuna to be 0.2 ppm or below – less than 1/5 of the FDA "action" level.

On Aug 1, The Wall Street Journal chronicled the story of elementary school student Matthew Davis, whose parents believe he developed mercury poisoning from eating too much canned tuna.

What that may mean to swordfish, shark, and tuna fish lovers – particularly if they are exposed to high levels of mercury through their mercury fillings – is a potentially toxic mercury build-up in their bodies, according to Sullivan. Symptoms of mercury poisoning include unexplained fatigue, headaches, joint pain, memory loss, and more.

Carvalho Fisheries, in response to a need for a minimal mercury canned tuna, began with the assumption that younger, smaller albacore tuna—because they haven't been feeding as long as older fish—may have significantly lower levels of mercury. This theory was tested and proven to be true—first in its own lab and later with Oregon State University. See related information below for further details.

Once the theory was established, Carvalho determined that it would only can tuna with mercury levels at 0.3 ppm or less—more than 2/3 less than what the FDA allows.

At one of its six Pacific Coast docks, Carvalho Fisheries selects only three-year-old fish—directly from the fishermen who caught it—for its minimal mercury canned albacore tuna. Testing on these fish shows an average mercury level of 0.15 ppm—half of Carvalho's standard for minimal mercury classification. Minimal mercury Tuna also provides essential omega-3 fatty acids. Jigsaw Health's Carvalho wild caught King Salmon also provides omega-3 fatty acids.
